Shouldn't the question been Nationality instead of ethnicity?

No offense, but how does someone "look" Irish? As someone from Bray, we've got all types of Irish folks, short, tall, fair, in between,silkies (dark), brown eyes, blue eyes, green eyes, and black, brown, red & blonde hair.
With the spelling of Erika's name, first and last, she's very likely Danish or Swedish.
her Wikipedia article says she's Swedish, Norwegian, Danish, Welsh, and Irish.
