<p dir="auto">that is, he doesn't expect fine dining in a steakhouse, he understands that the restaurant industry services a plethora of customers from all walks of life.<br />
All he asks is that the food be 'restaurant appropriate' (if you're a steakhouse? Serve many cuts of steak and serve it well), or course alternatives can be provided for people who don't eat steak, but they should be the exception, not the rule.<br />
Gordon asks restaurants to be what they purport to be and to deliver the best quality food for that particular market.<br />
He expects people to take pride in their work and to step up to the plate on quality.<br />
I've never seen him demand something of any establishment that wasn't appropriate.</p>
