I can really see her as Bianca. She always portrays her characters with a sense of strong dignity be they very strong (like May) or very weak and shy (like Princess Vivian - I still do not recognize her voice on Sofia the First at all). Bianca needs to be very charismatic and needs a strong actress to make the audience care about her. Sabrina can definitely pull that off.
Plus she'd look great with black hair
