In the first scene, why Eddie didn't want to hustle the bar clients (they asked for it) but only the bartender?
It would have been a larger profit.

Eddie and his partner were looking for a payday. Eddie had $127 - roughly $600-700 in 2016 dollars. The bartender could put that up from the cash register (as he did), while most patrons don't have that type of cash with them.
