I think they were only able to eat his midsection because he was beleeding out. As they ate his stomach they were flushed out of his body by the gushing blood.

What I found puzzling was the fact that the flesh eaters only ate his guts. WTF?

It's called plot convention. We just accept it has happened based on the context in which it is presented in the film.

It's basically a gramophone using a crank to power the turntable. Why the record didn't skip, no idea, although the part of the tonearm that is attached to the needle probably had some weight to it.
