Dr. Zaius makes the argument in the court room about how Humans cannot think, Taylor in particular, "I know nothing of your culture i admit that." Zaius "Of course he doesnt know our culture because he cannot think." but logically you have to be able to think before you are able to talk, otherwise no words would be placed together logically and in sequence and the speaker would make mindless gibbering noises.
So Taylor should have told Zaius that he was able to think because he could talk and explained the logic of this to the council, basically disprove the notion that he could not think and make Zaius look stupid, that would create another line of arguing though but it would build the case for Taylor and make him be treated with more respect at least, to challenge the hypocripsy of Zaius.

I agree with Fletcherj119 and would like to add that it could be said that parrots can talk but not think (parrots really can think but with their twisted logic he would / could argue they can't)
I want to win the Nobel Peace Prize so bad that I would kill to get it

Actually it was Dr. Honorius (played by James Daly) that made the "cannot think" statement.
As Zaius put it - Taylor's case was preordained. They planned to perform experimental brain surgery on him which would lead to death.
Anything Taylor had to say was irrelevant. The orangutans would've dismissed any of his arguments as nonsense.
The sole purpose of the hearing was to discredit Cornelius and Zira.
