It was an accident. They used tripwires rather than train a horse to fall in a lot of movies back then (a trained horse always falls to its left). I don't know what the animal welfare rules were back then, but this was shot in Spain, so that may not even have mattered.
They cut before the black horse, the collider, could get up. I wonder if it ever did.
