QB for the Giants in the book was Hose Manning. QB for the Giants in their last Super Bowl appearence was Eli Manning. Did Dan Jenkins know something?

I don't think so.
"Semi-Tough" was published in 1972, and Eli Manning wasn't even born until 1981.
If Dan Jenkins had any "Manning" in mind at all when he wrote the book, it was probably Eli's father, Archie then the quarterback of the New Orleans Saints.
