After Galt's falls to his death (deservedly so) you see Rambo take his jacket off of him, then it just disappears.
At first, I thought he used it to make that scarecrow thing, but that wasn't a jacket on that thing. It seems that coat would be a hell of a lot more comfortable (and warmer) versus that tarp thing he made.

The jacket was covered with Galt's blood and it had fresh blood on it. Rambo knew they police were using dogs to track him down. So Rambo used Galt's jacket as bait to lure the dogs (and the police) into a trap.
Once the dogs were dead. The police had no way of tracking Rambo. And Rambo could take them out.

Perhaps after he almost caught a bullet while trying to talk to the police, he just booked it and didn't bother grabbing the jacket on his way.
