Spoiler Alert
Man From the South is one of my favorite Alfred Hitchcock episodes. I love how deliciously evil Peter Lorre is in that one, especially the eyes! I still heave a sigh of relief when the wife comes in and the lighter doesn't light. She played the game with him, too, because she is missing a few fingers.
Peter should have been in some more of them, like Road Hog (Boris Karloff would have been great as the father of the three boys) and Turn backward.

Thanks, but is seems not. After your reply I decided to look it up. The page is here:
Turns out the man counting out the successful lights was also in Escape from Alcatraz, which is where I must have seen him.
Tell me where does it say 'When you're lost you stay that way'?

Is Tyler McVey the one you're thinking of? It's been a while since I've seen it, but I'm pretty sure he was in the 'lighting' scene.

Yes, it's call Man From the South based on a Roald Dahl short story. It was an Alfred Hitchcock Presents but you may have seen the remade episode from the 1980's. It's interesting in that it stars Melanie Griffith with her mother Tippi Hedren from Birds and Marnie making a cameo appearance. The man with the lighter is Steven Bauer, the man with the cleaver is actor and director John Huston and his wife with hardly any hand left is Kim Novak from Vertigo. Can't remember who the man counting out the successful lights is, but he looked familiar.

SPOILER
I've also seen this (loosely based) in the 1990 episode of Tales From the Crypt, called "Cutting Cards". It starred Lance Henriksen and Kevin Tighe as two rival high-rolling gamblers (addicts).
The difference here is that they take turns with the fingers and then move on to limbs and so forth. It ends where they are both playing cards in a mental institution, but they are now reduced to armless, legless torsos playing Russian roulette.
