I've been wondering what that stare he uses to tame a beast is called. What was the first beast he uses it on in austraila? I know he does it to a dog or was it two dogs later.

Haha 5 years later, but i'll respond what that heck.
First animal he did it to was the buffalo that was in the middle of the road when they were driving through the outback. That scene is right here: https://www.youtube.com/watch?v=GvwHxn_ziD4
He does it to dogs in part 2. To a bunch of security dogs, rottweilers and dobermans I think.
In the films they call it "mind over matter".

It's called the death stare. He stares the animal into submission having the animal believe that it will be killed by him if it doesn't surrender and back off.
