Eddie says this to Joe when trying to convince him to let Mr. Blonde take part in the heist, and Joe looks perturbed.
Do you think this is because Joe values "the boys" more than the thieves, and sees the risk of hold-ups as too great to waste them on?
Or is it because he know the boys are psychos, not professional thieves, and might go haywire (which Mr. Blonde does)?

I always took it to mean that he doesn't like using his own guys because he sees the risk in guys who know him better getting caught and possibly flipping on him.
He probably took the risk with Vic because he'd already proven he wouldn't turn snitch.
So many stories, so little time.
