The cable McClane and Zeus were on fell in such a way that it should've split the guy vertically if it hit him, so I'm assuming it hit something else that went flying into him, but I don't know what. Does anyone know exactly how the thug patrolling the deck got cut horizontally?

Somehow I wasn't paying enough attention. The guy getting split in half is only shown for a few seconds. I first saw it on VHS which doesn't have as clear a picture when you pause it. Though I did rewatch it a while back and realize it when I paused it there what happened. The cable snapped him in half. That does answer the TC's question.

Did u never get the next shot where they grab the body to move it, and they are revealed to be pulling arms/legs side by side thus the body was not in 1 piece?

Funny I never realized that guy was cut in half until after seeing it dozens of times.
Green Goblin is great!

No idea. It was more for just shock value, so you shouldn't put too much thought into it.
