Everyone knows who El Chapo looks like, in fact he even spent time in jail and successfully broke out. And yet they still haven't caught him.
Just thought I would give you a real life example to help you out with this implausibility.
It really doesn't matter to people like Soze, Keaton or El Chapo if they know what they look like.
The real reason he wanted to kill the guy on the boat is because he knew much more than what he looked like and he was willing to share those secrets. Plus it just fits with his reputation which is even more important to keep so the legend can live on.

In the grand scheme of things, Kent/Soze f'd up big time. The police now know that he is the crime lord who goes under the name Keyser Soze.
In reality, he would be caught very quickly or he'd have to go into hiding for the rest of his life.

Well, he could always change his look - i.e. grow his hair out longer or just go bald completely, maybe even get plastic surgery if he needs to, etc.

It wasn't just that he knew what he looked like, he had intimate knowledge of his business dealings, which would put him in jail and ruin his criminal empire. Police knew exactly what Keaton looked like, but they couldn't do anything against him. As was said, Soze wasn't going to show his face again.
