Glad that others are finally buying the Arrow Blu Ray and getting to experience the uncut version, let alone see the detailed documentary/special features.

How does the Ulysses Cut compare to the extended cut that was officially released on a 2 disc DVD back in 2008?

There is an extended edition, Waterworld: Ulysses Cut, Revised Edition. You must own the blu ray with the extended scenes to legally download this version.
It is a fan-edit, and is recut to include all of the deleted scenes. It adds about 45 minutes, and adds a lot to the story, the characters, and the world. It also ties up a lot of loose ends, and explains a lot that was left ambiguous by the theatrical release.
I highly recommend it. It is available to download online.
