I loved the people of Carbon Creek, I wanted them to have a spinoff series, I thought that episode was much more interesting, the characters more compelling, than the Enterprise crew, I grew attached to them in just that one episode of time, more than any of the series regulars of Enterprise

Being alive during the time of Enterprise would be extremely unlikely. There are nearly 200 years between Carbon Creek and the series, which is the typical lifespan of a Vulcan. Spock's father Sarek was 203 years old and when he died and was considered quite aged.
I'd like to believe that Mestral was still alive in 2063 when Vulcans and Humans made first contact. Only then did the Vulcan High Command find out about T'Mir's lie and include him in their official records.

There was a subtle reference to TOS made by Mestral,he made this comment that"I need to go now. I Love Lucy is on tonight. "Lucille Ball and Desi Arnaz(the stars of I love Lucy) were the owners of Desilu the production company that produced the original Star Trek series.

Great episode, but I agree with u that some future tie-ins and subtle references to TOS would have really sweetened the show.
