Why did Dean look so distraught when he was looking at the bill for 31.09 which also had his thank you note on it? I know that he was pissed that Chet was basically degrading him, but is there any significance to $31.09?

I can go to a restarant like the one in the movie right now and get two entrees, two sodas and a dessert for about that much, no problem.

Not at that price.

Consider the daffodil. And while you're doing that I'll be over here looking through your stuff.

Nope, just the cost of two meals and drinks and maybe a dessert.

Because Chet gave him a $100.00 bill. So he left a $68.91 tip.
That's more than twice the value of the check, so Dean clearly thought he made a mistake (maybe he thought Chet accidentally gave him $100 instead of $50, which would still be a very generous tip but a little more reasonable).

I'm pretty sure they picked a random low number that was a lot less than $100. And I guess it's more believable that he left Dean a 68-dollar 91-cent tip than an even $70 or more.
"Oh, my God. Bear is driving! How can that be?!"
