Iirc, they never move camp, travelling different distances for the night watch as they moved the sheep from grazing pasture to pasture.

They would use rotational grazing. Rotational grazing is the practice of moving grazing livestock between pastures as needed or on a regular basis. This gives time for the vegetation to reestablish itself. For example think of 4 pastures within one larger square, as you rotate through them you get back to the first one. So they never have to go very far.
