It's terrible to have to choose just one, but if I had to, I'd probably go with De Sica's Bicycle Thief. It's a somewhat conventional choice (it regularly shows up on "ten best films of all time" lists) but sometimes conventional choices reflect quality. I once showed it to a bunch of students and they pointed out (quite accurately) that it wasn't particularly realistic by modern standards! Such a blow to me! It was supposed to be part of a movement towards extreme realism. Still a great film, though.
