<p dir="auto">My favorite sweet potato "recipe" is to cut equal amounts of sweet and white potato into french fries. If you have a crinkle cutter, even better. Chop up one or two onions. Mix all together with a little olive oil and roast in a hot oven on a cookie sheet. I like them with just a light sprinkle of garlic powder, but you can also sprinkle with salt and pepper. So easy and so good.<br />
I have also made sweet potato salad which is just roasting the potatoes, onion, green pepper, red pepper in a hot oven. When they are done, remove from the oven and add some frozen corn. The heat from the veggies will defrost the corn.<br />
To serve i just add olive oil, balsamic vinegar, honey mustard, and garlic powder. Toss that all together and add some cherry/grape tomatoes and a sprinkling of fresh parsley right before serving.<br />
This is a great dish to bring to a cook out because it doesn't have to be served warm or cool and since there is no mayo, it can sit out for a while.<br />

<p dir="auto">That really is the ultimate collection of sweet potato recipes.  Not sure why I never thought about making gnocchi with sweet potato.  Definitely going to try that.</p>
