All of those professions have protections in place to keep their people safe, as does football. The difference is those other jobs while dangerous aren't inherently disabling. Football is. Big hits over years are guaranteed to cause brain damage. The rules are in place to protect the players. You may find it entertaining to see them get knocked retarded but the players don't.
