Actually I overlooked the obvious… Spielberg handed one of his very few screenwriting credits off to Tobe Hooper (Poltergeist), although the extent to which he actually ceded control remains in question.

John Milius and Paul Schrader I can understand since they had more success writing films than directing but the Coen brothers taking time to punch up scripts is odd, unless they're getting paid a ton of money.

Yeah, I'm trying to think of equivalent situations.
I suppose that John Milius did a lot of screenwriting work - some for lesser directors - even after proving himself as a filmmaker. So has Paul Schrader to a lesser degree.
And then you have the Coen Brothers… Both they and Sam Raimi would have been seen as interesting young independent filmmakers when Crimewave was made, so much closer to a Tarantino and Rodriguez situation. Spielberg who they wrote Bridge of Spies for… I think even Tarantino would jump at the opportunity to write something for our most successful living filmmaker (technically that's probably James Cameron, but who's counting?)… And why they wrote screenplays for Angelina Jolie, George Clooney and Michael Hoffman (literally who?) is anybody's guess.

Directors do like to make changes to a script, Oliver Stone made a lot to Natural Born Killers, but it's different when the screenwriter is a nobody versus when he is a more successful director and has two Oscars for screenwriting. Fincher is the junior partner. Maybe he just follows a script though.

Perhaps. It depends on the script. I think most directors would be happy to have something on the level of True Romance or Natural Born Killers in their filmography. Most would probably be happy with something on the level of From Dusk Till Dawn as well, although I do agree that it would feel a bit light for Fincher.
I'm sure that this one is worthwhile to attract someone like him. From what I'm reading, Brad Pitt showed him the script after Tarantino decided not to move forward with it.

It's definitely among the better Elmore Leonard adaptations. Justified, The Tall T and 3:10 to Yuma (the original) are probably better, maybe Mr. Majestyk and Hombre but I haven't seen them in a while. But I'd put it ahead of the other two big ones in the '90s (Get Shorty and Out of Sight) and definitely all of the other ones.
