<p dir="auto">I usually add black Dutched cocoa when I make chocolate cakes. I also usually use a mix of almond flour and coconut flour, sometimes amaranth. I also use mayonnaise in the batter, which makes the cake extra moist, and it keeps it from drying out. When baked, the chocolate cake looks almost totally black and carries a very rich, chocolatey flavour. I have cream cheese and have been contemplating making cream cheese frosting. The best combo!<br />

<p dir="auto">I remember when it was really a popular thing for a while, years ago.<br />
My cake wasn't one of those real, totally flourless cakes.  It came out okay, but nothing too spectacular.<br />
