In my head, this doesn't make a lick of sense, but I'm extremely picky about this.
I don't like chunks. I like tomatoes, but when they're diced, not only do I not like them, but my body seems to reject them. Same thing with cucumbers and onions. If they're diced, I don't like them. I prefer very thin slices. Even apples. There's something about cubed apples I don't like, again preferring thin slices.
Come to think of it, even cheese slices! I prefer thin slices, not big chunks.

Not a fan, except for
very
finely grated coleslaw. I prefer very thinly sliced foods. I've been like that since I was a kid.

When I had two dogs, I would put a dollop of cottage cheese on the side of their food. One would eat that first, and the other would spread it over her food.

You have a fussy dog, too? That's too funny.
I have to mix his canned and kibble thoroughly (not just plop it in), and he prefers his tablespoon of pumpkin puree to be placed to the side, and his sardine to be at the edge of the bowl and not mashed in with the food. He also likes his bone broth served separately and not mixed in with his food. (I learned the hard way when he'd pout and refuse to eat until I figured out his preferences!)

Presentation is important.
Even my dog won't eat her food if it's just sloppily placed. I have to plate her food just so.

Tomatoes have to be sliced from the bottom up, and be thin. I don’t like tomato hunks. I don’t like diced cucumber.

Right? I really thought it was just me, but I can't do it! There's also something about the mouth feel when veggies are diced that I don't like. It doesn't make sense, but I'm also convinced it affects the flavour (and I justify that based on surface area).
Totally agree with you about butchered fruit, too. Even when I'm just preparing veggies and fruit for myself and we're not talking about how food is plated at a restaurant, I refuse to just randomly chop up my food like that. I don't mind squares of pineapple, however.

I do. I know it’s weird, but it bothers me when I get what I think of as butchered veggies or fruit.

for veggies, dice them all the way up and mix them all together, preferably mixed with rice or quinoa or whatever. then pour hot sauce on that.
that's how I prefer it
for fruit I'd prefer larger cuts. I definitely don't want them diced. I prefer to bit into a big juicy fruit.
