I've noticed that many of the Star Trek actors have worked on the video games. How much do they get paid for doing these? Because of their contracts on the series, are they obligated to do the games?

No, because neither Colm Meany nor Avery Brooks were in Deep Space Nine: The Fallen as O'Brien and Sisko respectively.
It's the actors own prerogative if they want to be in the video games or not, Terry Farrell did The Fallen game, even though her character was killed off Two years before the game was released.

I wouldn't think so, as "The Fallen" was released a year after DS9 finished.
