Other than Raising Arizona, Intolerable Cruelty, The Ladykillers and A Serious Man, all their work has been solid.

Intolerable Cruelty's a pretty bad one. The Ladykillers almost. Guess those two must weigh a ton, then. Heavy stuff.

My arse!
The OP probably hasn't even seen True Grit, Fargo, No Country For Old Men, O Brother Where Art Thou, Lebowski - ALL of which are great!
How many other directors have done as many great films as that?
The rest? Pretty good at least - Raising Arizona, Miller's Crossing, Inside LD
The Ladykillers is pretty much bad. But none of the others are.

A few excellent films, some great ones and a couple that are just okay. I wouldn't label any of their films as bad.

See this post is a little old and you may have seen one of those three since then but it's interesting that at this moment I've seen them all except for the three you named. Also Hail Caesar is out now which you may or may not have seen.

They are hit-and-miss - I admit. I'll give them credit for going out there to do something different - the price of that is that it doesn't work all the time.

I think it's underrated here, but True Grit has a 96% on Rotten Tomatoes and was nominated for 10 Oscars. Overall got what it deserved.

How can you "know" True Grit is bad if you haven't seen it? It's actually a quite wonderful film and severely underrated.

I've seen every Coen's movie except for Ladykillers, Intolerable Cruelty and True Grit (probably the worst ones I know) and I still had to find a bad one. No Country for Old Men , Fargo, The Man who Wasn't There, The Big Lebowski, A Serious Man, Barton Fink are all masterpieces the rest are all great!
