I don't get it.

  1. So white people can't have dark hair and olive skin now?
  2. There are only white and black people in the world, no one else.

I think her skin is a very light tan in general. I don't think she's that dark either. I've seen her in Black Christmas and Ivanhoe and she looks closer to the two photos you've linked than how she did in Romeo and Juliet. But she never really struck me as super pale, even when she plays Juliet.
As for her ethnicity, I think she has some Italian and Argentinian heritage and that she's also Latina, so she's definitely not Anglo.

She doesn't even look dark in the second picture.

Wrong. She is not white.
(Not that it should matter) Her very own website (see her official myspace page) lists her as Latino/Hispanic.
