I actually just saw Blade Runner for the first time and I have to say his performance was great. The only other notable film I have seen him in was The Fifth Element which which was also a notable role.

If you can even find a dvd of Steven Speilbergs's short-lived tv series "Amazing Stories", try to find the episode entitled "Mummy Daddy", where he plays a small part as "Willie Joe"
It's not the best role he ever did, but he did somewhat of a humurous turn as your archetypical rural pickup truck driving redneck. For some reason that role has stuck in my mind, and it still amuses me to think about it. I too have seen him in a lot of films, and his appearance in "Mummy Daddy" is typical of how his screen appearances were at that time(see: "Enemy Mine")
