I suspect she was much thinner in her youth and her most famous "assets" were significantly smaller until a substantial investment was made.
While she is very attractive, it is also obvious she has made a number of plastic surgery procedures performed - most noticeably her breasts.
Also notice they never put her in any outfit that shows her upper thighs. Like a lot of women in their 40's, that's the "dead spot" where cottage cheese, etc. makes its appearance and even plastic surgery is hard pressed to eliminate.
My problem with this woman is that if you've read her interviews over the years she comes across as the stereotype woman who uses her looks to control men and get by via the sugar daddy route. -

Totally agree about runway modeling. Print modeling? She's great, but even then, your eyes would go straight to her. The thing about fashion models is that they are supposed to have boyish bodies. When they walk down the runway they are supposed to be nothing but walking hangers for the designs, no one is supposed to be focusing on them. When you are a knockout like Sofia, I doubt anyone would be looking at the clothes.

in South America they like their models to look like regular women. not walking hangers.
they appreciate a woman's figure over the design of the clothes. You could say they rather more emphasis on the model than the clothes themselves
right.
