Howcome 'Ted' (2012) isn't listed in Sam's filmography? According to IMDB, he hasn't worked since 2007.

Exactly, he wasnt playing himself. He was playing a parody of himself. Should definitely be in his filmography, rather than "Self". He was acting in a role, not being interviewed.
