Those might work because they are in New York which has millions of people, but gluten allergies are so rare that if you don't have a large population near then you probably aren't going to have enough clientele to support a business.

Good luck. Do your due diligence, understand what running a business takes, understand the laws and constraints, know your demographic, hire a competent tax attorney and have a lot of startup cash.
You don't need a tax attorney if you won't make a profit.
Or should this bakery be a depreciation model? -

I'd have a gluten free restaurant if I could. Makes me lol because all these places that advertise gluten free meals have a disclaimer that there could be cross contamination and isn't prepared in a gluten free kitchen so it's not guaranteed. WHY EVEN OFFER GLUTEN FREE
I want people with allergies to feel 100% comfortable knowing that what they are eating is safe for them. The lack of everything for people with allergies infuriates me tbh and I don't even have one. It's social gatherings, parties, everything. Even daft little things down to trick 'r' treating for kids. I know none of you care and that's why ppl with allergies continue to suffer with gluten free oreo knock offs from asda because the real ones aren't available in their country

It's pretty simple over here to start a business. It's easier to start up something like a candle business though as they're not products that are consumed lol but small businesses start somewhere, and with people being able to order online these days, getting the goods to the customer is a piece of cake. Heh.
