that is, he doesn't expect fine dining in a steakhouse, he understands that the restaurant industry services a plethora of customers from all walks of life.
All he asks is that the food be 'restaurant appropriate' (if you're a steakhouse? Serve many cuts of steak and serve it well), or course alternatives can be provided for people who don't eat steak, but they should be the exception, not the rule.
Gordon asks restaurants to be what they purport to be and to deliver the best quality food for that particular market.
He expects people to take pride in their work and to step up to the plate on quality.
I've never seen him demand something of any establishment that wasn't appropriate.
