We don't see Mora or Luna transform from bat to human being or the other way around. These scenes are only a visualisation of the things people claim to have seen.
SPOILERS AHEAD
The scene where we see Mora enter the house as a bat, is an event described by the two servants. These two servants are part of the plot, so it is exactly what they have been told to describe to - finally - catch the murderer. In some way you can compare this scene with, for example, Kurosawa's "Rashomon"; we get to see what's being told by the characters, not what's necessarily the truth.
As for Luna 'flying' down, landing next to Mora: at the end of the movie we see her packing these wings. This event was put in scene to delude the murderer.

There are still a number of moments which make little sense if it's understood that Mora and Luna were stage performers rather than actual vampires. A good portion of what they did was physically impossible, done without audience, or both.
Mora and Luna walk through a spider's web without breaking it.- It would have made for a nice illusionary trick if it could have been pulled off convincingly. Unfortunately, they didn't have an audience. Perhaps they were practicing the trick for their next stage show?
Luna intimidates two people riding in a carriage - Her victims had no bearing on the plot to psyche out the baron, but I guess it's possible that she could have been testing out the effectiveness of her disguise.
Mora and Luna watch the investigator and baron in the graveyard, yet remain unseen themselves - I guess they wanted to witness the action and stayed in character just in case they were spotted?
Mora eavesdrops on the professor as he gives his plan to destroy the vampires - A vampire listening to his adversary's plan to destroy him would make sense. However, Mora had no audience and so no one was there to appreciate the vampire being in the house. Playing devil's advocate, I guess it is possible that the actor was listening in to see what stage of the act they were on.
Luna flies utilizing bat wings - Luna flies with bat's wings, the camera cuts away to the men watching through the window, and then Luna has human arms again. I'd be willing to pretend that a stunt which took a studio weeks to perform could be done in real time, but there's just one problem The camera cuts away from Luna and to the men watching her. They either would have seen Luna the vampire's wings transform into human arms or they would have seen Luna the actress take the prosthetic wings off.
Poor Fedor is attacked twice unnecessarily - First, he's drained of blood. Then, he's sent into a stupor. The tackle at the end was to prevent him from breaking up the act, but there's no reason for the first two attacks - especially when the ending makes it clear that he was not in on the act. Mora must have really had it out for the guy.
Foreplay between Luna and Irena - The first time that Luna drains Irena, it could be passed off as trying to instill fear in the baron. However, the second time around, the baron is already being hypnotised while Luna plants a rather sensuous bite on Irena's neck. (Something tells me that the actor playing Mora arranged this one.)
"Does she really have to make it look like she's about to kiss me?"
"Do you want to solve this case or not? If she doesn't kiss you - I mean bite you - the whole act falls apart."

I think there is a way to make it look like a bat turning into a man after all it was dark and there was fog.

What I didn't get was the fact that one year later, the Baron is still carrying his bottle of poison? And how did the impersonator know exactly what to say to the hypnotized baron? The butler is told to do exactly as he did that night, but the impersonator has to improve?
