It was likely dyed so that it would stand out against the black background for the giant scenes. That or the lighting made the hair look lighter. Either way, there is no on-screen explanation; the scenes with Giant Nancy would likely had been shot last, and with a tight budget, shooting new scenes to explain the inconsistency would be out of the question.

These aliens live by black widow spider rules, or praying mantis. They try to mate with a larger female, even if they have to make then larger through radiation, because radiation makes everything bigger.
Then, after copulation, the female takes the smaller male, starts chewing at his neck till his head falls off, then eats the body to assist in feeding the baby over the course of several months.
