So I saw in the trivia section for YCDTOT that there were several episodes that were not shown on Nickelodeon (all the 1981 episodes, "Adoption" and "Cosmetics")
I know the "Adoption" episode was only shown once (and from the trivia section, I can see why), but why were the 1981 episodes and "Cosmetics" not shown? -

I believe they fazed out the 1981 episodes because they were longer in running time and had a different feel to them than the later shows.

Actually, Nickelodeon did show the '81 episodes as well as Cosmetics, but they disappeared from the show's rotation on Nick after 1982.
The 1981 episodes were originally shown in Canada only on CJOH in Ottawa (the TV station where the show was made), and then were edited down to half-hour packages for syndication. Nickelodeon bought the series and started showing it in January 1982, but apparently their contract to run those episodes expired after five years and by 1987 they chose not to renew since they'd built up a sufficient backlog of 1982 to 1986 season episodes. As for why they chose not to renew, most believe it's because the 1981 season episodes were significantly different in look and feel (since they were edited from hour-long episodes) from the later seasons. Though some of those episodes were more mature than what came later (i.e. dealing with topics like drugs), I don't believe content was the reason Nick stopped airing the '81 eps. Not sure why Cosmetics also got pulled. I believe YTV in Canada, once it picked up the series in 1988, continued airing those older episodes as well as the short-lived CTV network spinoff from 1979 "Whatever Turns You On." -
