Vincent does out of pure spite. Beats him 9-1 or something like that
    "Captain Insano shows no mercy"

Doesn't really matter because Eddie says, in response to Vincent's "Eddie what are you going to do when I kick your ass", "Pick myself up and let you kick me again". "If I don't whip you now, I'm going to whip you next month"
So, the "final game" doesn't really settle anything.

The Forest Whitaker character in "The Color of Money" represents what Eddie used to be once upon a time, and what he's trying to create in Vincent. It's a clear vice to induce the character study of Eddie Felson and his current loss of confidence in himself.
Eddie won the final game, because Eddie Felson is the best, and as he states "I'm back!", tells the viewer that he's cured of his lack of confidence in himself.

Pretty sure if they'd filmed that scene, the last line of the film would've been:
Vince: "I quit EddieI can't beat ya"

Well, I believe Vincent was better than Fast Eddie was in his prime, so Vincent.
Hey there, Johnny Boy, I hope you fry!

Probably Vincent, given that he was younger and at that point, probably superior to aging Eddie Felson making his comeback. But he was also a bit of a hot head, and maybe Eddie could gain from that.
Either way, it seems like less than a sure thing.

I think Vince, but if we had that scene, all the movie would have lost its point.
