A "take" in acting is the over-large reaction of a character who is startled or amazed by another charcter's action. It is often accompanied by suddenly wide eyes and/or a violent head shake. We see the cougar hunker down as he is about to attack the little bear; then his eyes go wide and he runs off as the camera rotates to reveal Bart behind the little bear. The cat's "take" when he sees Bart is priceless; the trainers must have had him study Oliver Hardy and James Finlayson to get that wonderful take.

It's not made in one take. Obviously edited from several different shots. Cougar actually doesn't look particularly scared when he backs down, he does it very casually as if lost interest. Probably trained to do it.
