    Why did George and Moira run at the end? Just because the police were maybe going to prosecute Moira for income tax evasion? Surely they knew that running would be the most incriminating thing they could do.

      They aren't running; well, Moira isn't. She is going to keep some appointments. She even says so. George is going to to either check on or get rid of his car, to hide the forensic evidence, probably worried about the crime program and the chance of someone reporting seeing it near where it's hidden.
      They lean on Moira, over the income tax thing, to get her to cough up details about the salons she worked in, so they can see if there is a link to the known victims. This and the crime program (and the line up) have Marlowe spooked, so he knows he needs to get rid of evidence. They grab Moira for questioning about her specific knowledge of the other victims, once they have established the link, from cross-checking Moira's list of salon's and the victims' patronage of those places. This leads to her confession about George and the sado-masochistic elements and her realization that George has to be guilty and she was the link to his victims.
      Fortunately, Ah keep mah feathers numbered for just such an emergency!
