If she was still alive, I'd say Natasha Richardson (God rest her soul) would have been good, but I'll agree with the poster who said Emma Thompson would also be good.

I think the idea would be to get somebody who was either English or could do a better English accent Renee Zellweger would defeat the object.

Agree with karlhinze - her supposed "English/British" accent and mannerisms were SOOOO fake. One would imagine that the only English person she had ever heard was Mary Poppins.
Emily Blunt. Rachel Weisz would also be an excellent choice,
if
they were to do a remake. I don't think a remake is really necessary, though. I'd personally rather see a "Three Men and a Bride" movie.
