I still have time for the theatrical cut but the Assemble Cut is just a much stronger story and better movie overall.
I still don't know why they swapped out the dog/cow for the xeno but perhaps someone has some thoughts on that at some intelligence level well above mine

That still confuses me too.
In the assembly cut, the dude that gets diced by the fan still mistakes the Alien for one of the dogs when it’s hiding down that little air duct, but I’m pretty sure the dogs were cut entirely out of that version.
But in the novelisation (I read it way back in grade 6) the Alien comes from a bull. Seems to be the case with all the 90’s game adaptations as well.
Seems like the producers just randomly decided to change it to a dog towards the end of production. -

I was thinking that a cow is practical as it produces milk which has lots of uses and is a sacred creature in the Hindi religion. A sort of preserver of life, mothering and nutritious.
The dogs are protectors and pack animals. They have a master that they will serve and protect but are ultimately corruptible given exceptional circumstances and not something you want nearby when that happens (Think rabies).
But beyond that I don't have much thought on the object of where the xeno comes from because it's not explored in the movie. So why change it?
I'm up for people spit balling ideas as to why the xeno would have to be in either instead of a lonely prisoner out for a walk but there must have been some thinking to it. I just can't fathom what that would have been

It’s a terrible sequel, but on its own it’s a decent enough sci-fi horror. Once you get past annoying Fincherisms (overly loud dramatic music, extreme facial closeups/montages during dramatic moments)

The video gives a good breakdown of the story and then its mostly visuals, sounds and movie talk type stuff.
She's got a good channel, still young and new but it's full of decent content if you like Manly Movies
