Aren't you a bit carrying away here? Jeremy hit and twisted her? Juliette started to cry? WTF?

According to an interview with Binoche on the subject. She did not click with Jeremy anyway and in the scene where he bangs her head on the floor he did not discuss that first. She was upset and needed space.

I'd really be surprised if this were true. I would think that it would very difficult for a male actor to maintain his "concentration" during a love scence no matter how beautiful the actress. For one, there are numerous stage hands and grips, etc. all viewing the action and for another the director is shouting instructions.
There is an interesting French film by Catherine Breillant called Sex is Comedy bout trying to film a love scene with two actors. It made me see love scenes in a new light. -

Anyone who has spent time on film sets can verify that while filming some scenes, sexual relations do take place. In a film this intense, the actors and director should have a discussion and agreement prior to shooting. Whatever did happen, it's not hard to understand an actor wanting a break in a film of this sort.

Actors and actresses who do explicit love scenes are usually provided with some type of material to place between them so their naughty bits do not contact each other.
That being said, there is not much males can do about stopping sexual arousal when it happens. It sounds like Juliette Binoche is a bit pretentious, or extremely femenist and/or lesbian to walk off set over something like this. She should have taken it as a compliment to her ability to arouse the male libido with her sexuality.
Even while acting, when you are naked with a member of the opposite sex, as a heterosexual thinking about baseball and a cold rain only goes so far. Eventually involuntary actions take hold, and arousal occurs. Maybe Juliette should grow up and realize adults are adults, and if the prospect of a male actor getting aroused during a love scene is traumatic to her, she should select her roles so that she is not placed in that situation. It was she who became unprofessional when she walked off set. -

I don't think it was Irons poking her with an erection. The other poster said he was very intense and physical and bounced her head off the floor, which she was not prepared for. Plus supposedly they didn't like each other too much to begin with. That sounds more likely what happened.
