I'd watch it in a heart beat, they'd very likely change a lot probably toning down the homoerotic elements but a TV series would be the best way to adapt the Vampire Chronicles.

Before Watching "Dracula" on NBC I would never have thought they could get away with it on network tv but they did so certainly cable could handle TVC. Cast near unknowns who actually fit their roles physically or you have already started off on the wrong foot. And hire a writer who can adapt the books successfully. Never underestimate the value of a good writer.

Wouldn't work not a chance.
The thing about this brilliant particular movie is that the actors who portrayed these characters literally owned them. It just wouldn't be same without the original actors Geez, it wouldn't even be close.
You might as well come up with a totally different "Vampire Chronicles"- using different characters who may resemble the original. Then that would work.
There's certain cinematic masterpieces where the performers basically cemented the the fact you can't use different actors. It just doesn't work, it a huge waste of money & totally forgettable.
However I know of only one movie where it successfully happened & that was with Hannibal. Hannibal was a brilliant movie & I liked Julianne Moore but come on, imagine if Jodie was in it. It would've been x10 better- & that's just the Truth. -
