I get why she'd be obsessed over athletics (while neglecting important beep like academics, the bitch!), but damn near all of the beep she buys serves no real purpose in a high-school setting.
I've seen every episode and they never mention why that is.
    Any theories?

She is a total crook. Changing grades for the jocks, always misusing school funds to buy stuff to spy on teachers and students, not telling anyone about the secret meeting with the Ultra Cola exec, blackmailing Jane about changing the caption on her painting, etc. When she and the teachers are at the surf and turf restaurant and she lets it slip that she is getting $50 per day to spend on meals while they are getting only $20. So many more examples than that even.
She doesn't care that Jamie could get killed in the joust at the Renaissance fair (makes him sign a waiver, lmao) or is so mad at Daria for not selling the diabetic woman who collapses two boxes of chocolate bars.
I think that's why, honestly. She just is corrupt and always oversteps boundaries. I would be curious to know what the inspiration for her was, and how they came up with such an extreme, unethical character for the school principal.

This, and if you look at some really crummy schools sometimes corruption by the principal is the reasoning for it, or someone higher.
It's possible it was even relevant when the series was being produced in the 90s like a lot of topics in the show (Like the mall episode, which is hilarious to watch today when malls are literally dying).
