Remember the two hot chicks the guys pick up at the club? I finally realized who it is, the one I thought I recognized, and I feel so stupid it took me this long to remember. It's the mom from Dawson's Creek. She's really good looking and looks so young in this movie compared to in Dawson's Creek.

I think you might be confusing Gigi Rice with Mary-Margaret Humes (Dawson's mum, who wasn't in this movie).
