Kevin Hart is the obvious choice to play the loud mouthed successor to Chris tucker.
But what young Asian actor could carry on Jackie chan's legacy?
John Cho is probably the most successful Asian comedy actor, but he's American and possibly too well known. There's also Han Seoul-Oh from the Fast movies. He did a similar movie with Stallone, about 2 partners butting heads on a case.
If they wanted to go native Chinese, I'm unfamiliar with the choices.
Who knows? They might not even keep the same ethnicities for the two main actors. -

I would imagine they would try to get Byung Hun Lee(He actually played Lee in that Funny or Die Rush 4 Video with P Diddy as Carter) or Brian Tee for Lee since those two are going up in the ranks in Hollywood if a Reboot was happening

Kevin Hart's pushing 40. Matter of fact, he and Chris Tucker aren't too far apart in age. Tucker was born in '72, Hart was born in '78. I doubt that they'd cast him as Carter, they might as well keep Chris.
