I'm an old school guy who lived and worked in Vegas when it was run by the mob. So, the first one I think of when asked is Joey Aiuppa, main boss in Chicago. He's the one who sent Tony Spilotro out as mob enforcer, and then order the hit on him when he got out of control.
Spilotro's story was portrayed by Joe Pesci in "Casino" with Robert DiNiro.

Al Capone,because of Boardwalk Empire. I don't know much about the mafia other than that. I'm planning to watch Godfather, Goodfellas etc - I loved The Sopranos and will miss it, so I hope they'll fill the void. There's a Netflix docudrama about Gotti which should be interesting - I know absolutely nothing about him at the moment.

I posed this question to prove that David Chase should be ashamed of himself for encouraging James Gandolfini to gain weight for his role as a mob boss.
Out of 11 replies (some didn't answer the question), only two people said Capone. Therefore, I could say most people don't think of an obese man when they imagine a mafia don.
No one put a gun to Gandolfini's head and made him get grossly overweight, but Chase absolutely had a hand in his demise.
