Favourite, for the depth of feeling, and for the nobility of the theme, is probably the one where Jack flashes back to his childhood.
For pure dynamic movement, the one in which Jack fights the undead (and ultimately AKU) in the graveyard.
But I also love "The Seasons of Death," for that unique and intriguing encounter with the Spring Goddess.

The demon house episode was surely one of the best ever.

This is one of my favorite series, so it'll be hard to pick my fave episodes, but let's see here
For artistic style: Jack vs the Ninja (the black/white fight scene is truly amazing)
For humor: Jack vs. Aku (some of the funniest lines in the whole series are in this episode)
For story: Tale of X9 (a breathtaking homage to classic film noir)
For action sequences: Jack vs. the Rave (I love the combination of martial arts and dance music)
For characters: any of the Scotsman episodes (he's always going to be a fan favorite) or Jack vs. Da Samurai (yes, a lesson to posers everywhere)
And on a personal note: I'm a fan of 'Jack vs. the Zombies', no particular reason, just like it.

I agree wholeheartedly with Griffin84 but If I had to pick it would be the Tale of X9 only because I'm a sucker for film noir

The Three Blind Archers is a friggin classic, such a fantastic episode.
Jack vs. Mad Jack is an amazing one too, I think the scene with the burning tree being overflown by the beautiful waterfall is one of my all-time favorite moments from any cartoon (or any other) show.
Of course the 1st Scotsman episode.
I guess the 4th would be Jack Learns to Jump Good.

Jack in the Haunted House(by far)
Jack and the Three Blind Archers
                            Jack Turns into a Chicken
                            Birth of Evil part 1
and the first episode. i love when there is no dialogue, just entrances me for some reason.
If I've said it once I've said it a thousand times.who are all you people?

It would be far, far too difficult to pick out favorites in this most wonderful and beautiful series.
Though there are two that stand out to me in particular:
Firstly, the one where Aku decides to challenge Jack to a duel. In terms of humor, it has everything from Aku's usage of an average phone, to evil skeleton minions wearing socks and sneakers, as well as all of the hilarious and clever dialog inbetween. It also has a wonderfully choreographed and animated fight scene that stands out quite well among others in the series.
Secondly, the episode about the X model robot, and his beloved dog Lulu, that sweet thing. It was done up in a very lovely classic manner, and I couldn't help shedding a few tears at the episodes conclusion.

If I'm not mistaken, it's called Jack and The Spartans. That would be my #1 pick for favorite episode.
It was just an amazing homage to the Spartans' legend and what a great way to end it. My favorite.
                                  Also,
Jack vs Aku was one of my funniest, I litteraly fell on the floor when Aku wrote a letter to Jack writing: "Dear Jack, Look Behind you, Love Aku". loooooool, priceless.
                                  Also,
The one with the black wanna-be Samurai, the 3 Archers, the immortal soldier who had to fight in a honest battle to be saved, and the one with the black gate keeper, which reveals that Jack is not yet ready to return the past, and show him into the future as a great king. Get me goosebumps every time.

For me Samurai Jack's best episodes are as follows:
The Three Blind Archers: Just a masterful use of sound and silences. This is the episode that defines the show for me. Great action and cinematic techniques, and an amazing style. Also an episode that respected audiences' intelligence with regards to its "show don't tell" approach.
Seasons of Death: Samurai Jack at its most artistic. Superb animation, artwork, and some great moments of symbolism. The spring sequence is one if the great moments in all of Samurai Jack. The episode is also restrained, it doesn't go for grand drama
Tale of X9: Wonderful homage to film-noir and the music is fantastic; evocative as well as melancholy. X9's story is actually tragic and the scene where X9 plays music for his dog while the world outside changes rapidly is as powerful a scene as i have seen in animation. Also has powerful implications for Jack's effects on the world and its people.
Jack and the assassins: This episode was funny and creative, as well as brutal and sad. The diffrent style of animation for each assassin's story of how they were gonna kill Jack was great and there was great buildup in the episode. One of the episodes that shows Samurai Jack at its most cinematic. Also has one of the great endings in the show. A woman kneels broken, alone and crying in the freezing snow, as much a victim of Aku as Jack, as Jack simply walks away, leaving the bodies of the assassins in the snow. Like Tale of X9 it shows that sometime Jack does more harm than good being alive and victorious and would it have being morally right to sacrifice himself for her cause.
Special mention goes to the Jack versus Ninja fight for sheer awesomeness and style/creativity and Jack versus the ultrarobots for its grim and dark tone and great fight sequences.

Eh, if that woman had just asked for Jack's help to free her kingdom, he probably would have helped.
Her attempting to murder him didn't help either. Instead of, I don't know, maybe taking some responsibility for the situation and maybe trying to free her kingdom herself, she had to try to fix things by taking it to an outsider. Never try to do that, kids.

I don't know the title of the episodes, but I'm looking inside each season and going by the episode numbers.
                                          From Season 1:
Ep.I of course, it's the start of the quest.
Ep.III I love how Jack set up the defense against Aku's spider-like robots. And Jack being covered in oil-grease-blood by the end was just classic.
Ep.VII The three archors episode. What can I say? The cinematography kicked ass.
Ep.XII The gangster one, the characters reminded me of the old Looney Toon gangster episodes. It's one of the funniest of the series.
Ep.XIII Aku's stories adapted from famous fairytales are hilarious, because they are obviously tampered with by Aku's ego.
                                          From Season 2:
Ep.XVI The Dome of Doom fightsthe battles are somewhat jaw-droppinglike most in SJ.
Ep.XXII Aku hires the Hunters and the battle, again, is jaw-dropping.
Ep.XXVI 300 Spartan episodeit's one of the most epic of the SJ episodes.
                                          From Season 3:
Ep.XXX The graveyard zombies; I just loved how the first got introduced. It reminded me of the Alien movies when the Zombies were waiting to attack and their mouths are slowly opening and some of them are hissing and growling.
Ep.XXXIII The too-friendly of a Creature episodeanother one of the funniest in the series.
Ep.XXXV Jack stumbles upon the spooky mansion in this one, and I just loved the black and white scenes. You can tell Genndy was inspired by alot of good horror films.
Ep. Birth of Evil, Parts 1&2 I just love Aku's origin story.. this one is a true classic for the series.
                                          From Season 4:
Ep.XL Jack fights the Ninja. The end battle with the black and white atmosphere was really neat, especially when the Ninja is planted against the board by Jack's sword and it slowly slices down the sword..
Ep.XLI This is one of my favorites. Jack embodies the Robo-Samurai and fights the Mondo-bot. I love the art direction in this one. Especially the sound design. They definately paid attention to detail, with the massive bullits hitting the buildings, the sounds you hear when Robo-Samurai moves (that sound of stone movingit's awesome).
Ep.XLVIII Being tired of people failing, Aku decides to take on Jack himself. Probably the first episode to be nothing but an all-out Aku vs. Jack situation.
Ep.XLIX The Four SeasonsI just love this one.
Ep.L This is the one where Aku forces an old, robot assassin to eliminate AkuI can't seem to remember this one, but I remember it being one of my favorites, who knows, I need to watch it again sometimeI might be thinking of a different episode.
Wow, a long list. But I have to be honestthose are my true favoritesI watch those the most. And every catagory, whether it be the art direction, or the sound, the epic atmosphere, these episodes have it all.

"It was on company property, with company property. Sodouble jeopardywe're fine."
