does dou niu die after ryo defeats him?

We have no way of knowing, but judging by the type of game Shenmue is. Most probably not, Ryo makes a big deal of his father killing Sunming Zhao. He always says "My father would never do that". So do you think that Ryo would kill Dou Niu, and then not even think about what he did? Probably not.

Most Probably not. Judging by the type of game this is, and the type of person Ryo is, I wouldn't think so, because he makes a big deal, out of the fact that Lan Di, said that Ryo's father killed some guy called Sunming Zhao, so would Ryo kill someone and not even think about it moments later? Most proably not.
