'I appreciate it'

Nicely said. Rocky had been at the top, and had come crushing to the bottom again. He is thankful for every opportunity that comes his way, and knows nothing is guaranteed.
I eat things that would make a billy goat puke. -

I just bought this movie a few weeks back, having avoided watching it since it came out (didn't want to see an "old Rocky" trying to relive his glory-days). Having finally watched it I can say that it is now my favorite movie of the bunch.
My take on the "I appreciate it" thing it shows that Rocky is down-to-earth, humble, and an all around "good guy" and makes for a great contrast to Dixon who was cocky, full of himself, and spouting off about how he was better than everyone. -

Stallone says it in most of his films. In Demolition Man he said it when they made a toast to him at Taco Bell. I guess it's just one of his trademark lines. I've heard in say it in several interviews too.
