I think the most important comparison might be Jaime Lannister. if we compare Jon to Jaime then we can extrapolate on to older late characters.
Jaime (with 2 hands) imo was a better fighter than Jon Snow is right now.
Ned Stark (if Jaime is better, then Ned must have been too)
Barristan Selmy (If Jaime is better then the best fighter Jaime ever saw is too)
Robert Baratheon (in his prime)
then there's the obvious Gregor Clegane.
if the Mountain is better it's safe to assume the Hound and Oberyn Martell are also better. especially Oberyn.
and then from what we could watch there was:
Khal Drogo
Arthur Dane
I'm excluding:
Brienne just defeated and feverish and very handicapped Hound (and still had trouble)
Greyworm is a good soldier but not much better than a aged Barristan so i have my doubts
Daario Naharis is good but I don't think he is better
Benjen -we haven't seen him fight anyone that important
Jorah -what exactly has Jorah achieved a a fighter? won against unnamed dothraki warriors?
Bronn - what has he really donne that might put him higher than Jon?
Beric - besides loosing to the Hound and returning from the dead
Thoros - he beat Sandor a few times but he did set his flame on fire which scares him.
also this is all taking Ramsay's wordbecause without that statement Jon would be a barely above average fighter from what we can watch.
Sean Bean has not died from Lightsaber related issues yetjust saying
